Very Easy Blackberry Fool

Serves 4

METHOD:

  1. Blend blackberries, icing sugar and lemon juice and then pass through a sieve to remove seeds.
  2. Beat the Kiri and Greek yoghurt then pour into four glass dishes. 
  3. Garnish with blackberries. Serve with biscotti or Scottish shortbread.

  • 300g fresh blackberries
  • 60g icing sugar
  • 1 tablespoon lemon juice
  • 250g Kiri 
  • 200g 0% fat free Greek yoghurt
