Sponge Cake with Red Berries and Kiri

Serves 50

METHOD:
- Blend the Kiri and the red berry coulis together.
- Soak the sponge disks in syrup and top each of them with a rose of the Kiri + coulis cream.
- Decorate with red berries, sprinkle with icing sugar.
- Out of season: flavour the syrup with vanilla. Mix the Kiri with a mango coulis and decorate the roses with diced pineapple.
You can also add an alcohol of your choice to the syrup.
Excessive alcohol damages your health. Drink alcohol in moderation.

INGREDIENTS:
- 750 g Kiri
- 50 sponge cake disks 8 cm in diameter
- 10m ml syrup
- 1500 ml red berry coulis
- 50 strawberries
