Leerdammer Light vegetarian patties

METHOD:

1. Mix the first seven ingredients together.
2. Form the mixture into 10 large (or 20 small) patties and flatten slightly.
3. Dip each patty in a plate of egg white and then into a plateful of breadcrumbs.
4. Lay the patties on a non-stick baking sheet. Bake in a hot oven at 180°C/Gas Mark 4 for 20-25 minutes until cooked through and the base of the patties have cooked to a light golden colour.
5. Serve hot with the coloured side uppermost.

Tip! A light tomato sauce or a mild salsa would go well with this dish.

200g fresh breadcrumbs
100g Leerdammer Light Cheese, grated
150g leeks, finely chopped
2 tbsp fresh parsley, chopped
2 tbsp sweet chilli sauce
1 egg lightly whisked
seasoning
1 egg white lightly whisked
100g dried fine breadcrumbs
