Grilled Chicken a la “Saltimbocca”
Serves 50
METHOD:
Season the chicken with salt and pepper.
Using 5 tbsp of extra virgin olive oil, pan fry the chicken in a ovenproof pan until golden brown and cooked through – about 10-12 minutes.
Layer the tomato slices, the mushrooms and the sage leaves on top of each chicken breast.
Top each chicken breast with a slice of Leerdammer.
Put in a pre-heated oven at 200°C for about 8-10 minutes to cook.
Place the remaining sage leaves on a plate and top with the grilled chicken. Drizzle with remaining olive oil and serve.
Notes:
Try this recipe by replacing the tomatoes and mushrooms by bacon

15 tomatoes
250 g mushrooms
