Grilled Chicken a la “Saltimbocca”

Leerdammer®

Serves 50

METHOD:

  • Season the chicken with salt and pepper.
  • Using 5 tbsp of extra virgin olive oil, pan fry the chicken in a ovenproof pan until golden brown and cooked through – about 10-12 minutes.
  • Layer the tomato slices, the mushrooms and the sage leaves on top of each chicken breast.
  • Top each chicken breast with a slice of Leerdammer®.
  • Put in a pre-heated oven at 200°C for about 8-10 minutes to cook.
  • Place the remaining sage leaves on a plate and top with the grilled chicken. Drizzle with remaining olive oil and serve.

Notes:

  • Try this recipe by replacing the tomatoes and mushrooms by bacon

  • 50 chicken breast fillets
  • 15 tomatoes
  • 250 g mushrooms
  • 6 tbsp extra virgin olive oil
