Frozen lime Kiri® cheese cake

Serves 25

METHOD:
- Reduce the digestives to crumbs in a in a food processor with the sugar. Add butter and mix together.
- Spread dough into a tin with a removable bottom. Keep the tin cool.
- Beat the Kiri®, sugar, and egg yolks together.
- Whip the cream and egg yolks.
- Mix cheese into the mixture.
- Flavour with lime zest and juice.
- Whisk the egg whites into peaks and carefully pour into the mixture.
- Pour the mixture into the tin and chill.
- Remove a while before serving. Decorate with fresh berries if desired.
Tip: Kiri® keeps the cheesecake from running when at roomtemperature !

- 400 g Digestive biscuits
- 78 g butter
- 33 g brown sugar
- 48 g egg yolk
- 100 g egg white
- 0.8 dl powdered sugar
- 33 g lime juice, fresh squeezed
- 15 g lime
