Loosen the skin on the chicken breasts, keeping one side attached.
Combine the Boursin with the lemon zest and seasoning.
Divide the Boursin mix between the chicken fillets, carefully spreading it between the skin and flesh of each chicken breast.
Secure the open side of the chicken breast with a cocktail stick and place each in a large roasting dish. Chill for at least 30 minutes prior to cooking.
Bake for 20- 25 minutes or until the chicken is cooked through and the skin is golden brown.
Serve whole or cut each breast into 5 slices. Serve with vegetables and creamy mashed potato.
