Loosen the skin on the chicken breasts, keeping one side attached.
Combine the Boursin® with the lemon zest and seasoning.
Divide the Boursin® mix between the chicken fillets, carefully spreading it between the skin and flesh of each chicken breast.
Secure the open side of the chicken breast with a cocktail stick and place each in a large roasting dish. Chill for at least 30 minutes prior to cooking.
Bake for 20- 25 minutes or until the chicken is cooked through and the skin is golden brown.
Serve whole or cut each breast into 5 slices. Serve with vegetables and creamy mashed potato.
