Chocolate-Praline Ganache with Kiri

METHOD:

  • The chocolate ganache: chop the chocolate finely, put it in a bowl. Pour the boiling single cream over it. Leave to set for 5 minutes then mix with a spatula. Put it into a piping bag.
  • Mix the Kiri with the peanut butter and water and then add the praline. Put the mixture into a piping bag.
  • Filling the glass: the chocolate ganache forms the base, with the Kiri and peanut butter on top. Decorate by sprinkling with cocoa powder and chopped praline.
  • Chef's tip: Replace the peanut butter with walnut butter or grilled hazelnuts, according to taste.

  • 1.5 kg Kiri
  • 1 kg cooking chocolate
  • 1 kg single cream
  • 200 ml water
  • 500 g peanut butter
  • 500 g chopped praline
  • Cocoa powder
